This might be the easiest recipe on the planet. I found this recipe in a Better Homes and Gardens special interest magazine titled, “Make and Take: easy recipes for potlucks, parties, and picnics.” It only has three ingredients. Strawberries, cucumbers, and poppy seed salad dressing.
According to Wikipedia, strawberries were first bred in Brittany, France. “The fruit is widely appreciated for it’s characteristic aroma, bright red color, juicy texture and sweetness.” You name it, strawberries have a chance of being in it. It’s been used in lip gloss, hand sanitizers and perfumes.
My first job was at Shoney’s and part of our “side work” was to make strawberry pies. I love the flavor so much I also had my wedding cake be strawberry too. They also pack a healthy punch in your diet. They are full of antioxidants and phyto-nutrients, but eat them soon after picking them. Just two short days later they begin to lose their vitamin C levels. When storing in the fridge, place in the high humidity storage bin.
This is the type of poppy seed salad dressing I used. Remember Elaine from the Seinfeld episode testing positive for opium in a drug test? Supposedly, being tested positive after eating these kidney shaped seeds is an old wives tale. According to Wikipedia, “poppy seeds have long been used as a folk remedy to aid sleeping, promote fertility and wealth, and even to provide supposed magical powers of invisibility.” It is also a nutritionally dense spice.
The last ingredient is the cucumber, which comes from the ghord family. I love cucumbers and will often juice them in my Vitamix. Juicing organic cucumbers are best because you don’t have to peel them before consuming. The only thing is when you buy organic, they are almost triple the price of non organic. I suggest you plant your own because they are easy to grow.
